Crispy Lentil Cakes with Basil + Garlic
Lentils are seriously underrated, and these lentil cakes prove how awesome they are. These make a great veggie burger, too.
Ingredients
- 1 c Cooked Lentils, drained
- 1/2 c Breadcrumbs
- 1/2 c Finely Chopped Onion
- 1/2 c Finely Chopped Basil
- 4 cloves Garlic, peeled + chopped
- 1 pinch Cayenne Pepper
- Salt, to taste
- 1 Egg, lightly beaten
- 2 tbsp Olive Oil
Instructions
- Mix all ingredients except oil in a medium bowl.
- Place half of the mixture in a food processor + process until it has a paste-like consistency. Combine with the other half of the unprocessed mixture, + thoroughly mix together.
- Use a 1/4 cup to divide the mixture. Using your hands form disks of approximately 3 inches in diameter (wetting your hands helps to form).
- Heat the olive oil in a nonstick skillet over medium heat. Cook the patties for 2-3 minutes each side or until golden brown. Serve as is, with a simple yogurt garlic sauce or pesto, or pair w some greens tossed w a basic vinaigrette…
