Fluffernutter Cookies

Ingredients
- 150 gr All Purpose Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 130 gr Natural Peanut Butter
- 85 gr Butter, room temp
- 75 gr Sugar
- 75 gr Light Brown Sugar
- 1 Egg
- 50 gr Marshmallows, either minis or regular ones torn into bite-sized pieces
- 100 gr Chopped Chocolate, or Chocolate Chips (dark or semisweet)
Instructions
- Preheat oven to 350°F. Line two baking trays w parchment paper + set aside.
- In a large mixing bowl, whisk to combine flour, baking powder, baking soda, and salt.
- In another large mixing bowl, combine the peanut butter, butter, and both sugars. Mix until smooth.
- Add the egg to the butter mixture and mix until just combined. Add the flour mixture, then add in the marshmallows and chocolate, and mix until thoroughly combined.
- Scoop or shape the dough into 1.5 oz (3 tbsp) sized dough balls, and place onto the parchment-lined trays. Keep them 2 inches apart.
- Bake until they're just starting to brown, 12 minutes or so. Then, eat them all.
