Sesame-Garlic Noodles with Eggs
No yolk, this recipe is egg-stremely delicious. Full flavoured yet super easy, it's something I just keep coming back to.
Ingredients
- 200 gr Noodles Not too thick
- 2 tbsp Sesame Oil
- 2 tbsp Tahini
- 1 tbsp Sesame Oil
- 2 tbsp Soy Sauce
- 4 tbsp Warm Water
- 1/8 tsp Chinese Five Spice Powder
- 1 pinch Salt (to Taste)
- 2 cloves Garlic, peeled and grated with microplane
- 1 tsp Oil
- 1-2 Eggs, per person
- Red Chili, sliced optional
- Scallions, sliced optional
Instructions
- For sesame sauce, combine tahini, sesame oil, soy sauce, water, five spice, salt, + garlic. Stir until well combined.
- Cook the noodles for 4-5 minutes or until just tender (or however long the package recommends). Drain and put into mixing bowl; mix with a couple teaspoons sesame oil (to prevent sticking)
- Heat the 1 teaspoon oil in a small nonstick frying pan over medium heat. Crack the eggs into the pan, cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes.
- Meanwhile, mix the noodles with the sauce until combined. Place into bowl or plate, and slide the eggs on top. Sprinkle everything with the scallions and chili (if using). Enjoy
