Spicy Pork + Miso Soup
I love pork, I love spicy, and I love miso, so this recipe was an absolute no-brainer.
Ingredients
- 3 tbsp Sesame Oil
- 4 cloves Garlic, peeled + roughly chopped
- 1 Onion, peeled + chopped
- 2 tbsp Chopped Peeled Ginger
- 1 lb Ground Pork
- 1/4 c White or Red Miso Paste
- 3 1/2 c Chicken Stock (homemade or store bought)
- 1 tbsp Sriracha or Chili Sauce
- 2 tbsp Rice Vinegar
- 1/4 c Soy Sauce
- 500 gr Noodles of choice, prepared according to package directions
- 2 c Baby Spinach or Chopped Baby Bok Choy (optional)
- Sesame Seeds and Sliced Scallions, to garnish (optional)
Instructions
- Heat sesame oil in a medium pot over medium heat. Add garlic, onion, + ginger, + sauté till golden + tender, 5-7 minutes. Add pork + mix, stirring constantly + cooking till the pink is gone. Add the miso, mix + cook an additional 2 minutes. Add stock, chili sauce, rice vinegar, + soy. Bring to a simmer + cook for 5-7 minutes, stirring occasionally.
- Divide the cooked noodles among 4 bowls. Top with the miso broth (making sure you divide the pork evenly), add a handful of baby spinach, + sprinkle over the sesame seeds + scallions. Feel free to have extra chili sauce if you’re digging them spicy vybezzz.
